We are thrilled to announce a new location in Orange County!

We're excited to announce a new, central Orange County location in Costa Mesa! We'll be trying out this new spot as part of our September Winemaker Dinner series. For our September offering we're thrilled to share a fantastic line up of 5 micro-production wines from boutique winery, Thidibo, which is located in the Willow Creek area of Paso Robles. Co- Owner and Winemaker Josh Beckett will be joining us for each evening. Josh has an old school approach to grow­ing and mak­ing wine with a new school atti­tude. He’s been in the wine indus­try his entire life but con­tin­ues to learn and grow, col­lab­o­rate with his peers and try new things in the vine­yard and in the win­ery.  As a kid, Josh grew up at Peachy Canyon Win­ery with his fam­i­ly, founders Doug and Nan­cy Beck­ett. After years discovering his own way of making wine, first in Australia, then returning to Paso. Josh, alongside his broth­er, Jake, created a name for himself as co-owner and winemaker of edgy, boundary-pushing brand, Chron­ic Cel­lars. Chron­ic was an out­let for Josh to exper­i­ment with uncon­ven­tion­al blends, small lots of fruit and new age wine­mak­ing tech­niques. After sell­ing Chron­ic Cel­lars to WX Brands, Josh and his wife/co-owner, Gibsey devel­oped and plant­ed Thibido vine­yard in 2018 and 2019. This vine­yard is the cul­mi­na­tion of Josh’s expe­ri­ence, plant­ed with sev­er­al vari­etals, root­stocks and trel­lis­ing styles in order to max­i­mize the qual­i­ty of the fruit and min­i­mize the need for over­ly inva­sive winemaking. To showcase these wines, Chef Erin has created an elevated, seasonal pairing menu. You won't want to miss this memorable evening of wine, food and conversation! Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course. Though we cannot guarantee special requests for menu changes, please contact us (email/phone above) if you have any food allergies or special considerations and we'll do our best to accommodate! Please understand that this is pop-up experience, it is not a restaurant. A temporary kitchen is built to accommodate the dinner and resources are very limited. Minor changes can usually be accommodated. Diary Free and Vegan requests cannot be met. Menu changes should be requested at least 48 hours prior to an event. Please DO NOT buy tickets with the assumption that any special request will be met, please check with us first. Please note that if you purchase tickets before inquiring about your modification, and it cannot be accommodated, the below cancellation policy still applies.

There is a 48-hour full-refund policy. We apologize that cancellations within 48 hours of the event cannot be refunded.

Lastly, please note that your total cost for the dinner includes two processing fees that are collected by third parties and do not transfer to Wine Pairs Events. Instead of passing on these additional fees to customers, we have decided to absorb them. This however means that when a customer cancels a reservation, at any point, 6% of the ticket total is non-refundable, as these processors do not issue refunds for any reason.

About This Venue:

This venue is located in a residential/luxury apartment complex within Costa Mesa. This space is a beautifully appointed club house within the complex. This venue seats about 20 people in standard table height seating and some bar height seats. Group seating of up to 8 people is easily accommodated, with advanced notice. Seating is assigned at all events, if anyone in your group has made a separate reservation and you would like to sit together, please ensure you provided this information during registration (chef@winepairsevents.com). There is a good amount of free guest parking, but please note it will require a short walk to get to the cafe. Ride share services or taxis are always recommended. We kindly remind you that this is a residential area and to please be aware of driveways, fire hydrants and mailboxes. If you arrive early, there will be a by the glass wine list available to purchase from.

    Conclude your evening with a dessert wine! We're currently offering Hawk and Horse Late Harvest Cabernet Franc (93pts Enthusiast). Dessert wine is only available by the glass (3oz) and MUST be ordered no later than 2pm the day of the event. Your glass(es) will be served at the end of the dinner with dessert. Please allow yourself some extra time to enjoy your additional wine.
