What is a Pop-Up Dinner? Chef Erin Sealy's Pop-Up dinners usually occur in either existing restaurants or wine bars with limited menus. Regardless of the type of location, the experience is the same. For one night you will have the chance to experience a one-night-only menu that was crafted specifically for what is being poured in your glass! Cuisine is eclectic, creative and most important, specifically created to pair with the winery, brewery or distillery of the night.

Pairing Dinner at one of our exclusive locations in San Diego County, Orange County and beyond. Along with dinner, Chef Erin discusses each unique course and why they pair with the chosen wine/beer/etc. In addition, a representative (usually a winemaker/brewer)/distiller) will speak about what's in your glass, how it's made and the history behind the operation.
