Please join us for an evening featuring Lake County wines with 93+ point scores!

For our October dinner, we're excited to announce our first dinner featuring Hawk + Horse Vineyards in Lake County! We've selected a fantastic lineup of wines that will showcase 5 different selection, ALL 5 of which boast 93+ point scores from Wine Enthusiast! Lake County, particularly Red Hills, which these wines hail from, has gained quite a bit of acclaim in recent years. Located about 30 miles north of Calistoga, the region is known for its volcanic soils. Equal parts knowledgeable and entertaining, co-owner, Mitch Hawkins will be joining us for the evening to share his wines and the Hawk and Horse story. Daily vineyard operations are managed by Mitch, who has become a respected authority on biodynamics in the vineyard. Hawk and Horse is family endeavor. Production is small and they are self-distributed. Wines are crafted by consulting winemaker, Dr, Richard Peterson. Peterson is one of Napa's most renown winemakers, a true forefather dating back to E & J Gallo in the 50's. He is known for putting Beaulieu Vineyard on the map, as well as Atlas Peak, where he notably planted the initial 450 acres of in its volcanic soils. You might also recognize him as the first consulting winemaker for Screaming Eagle, (later taken over by his daughter, Heidi Barret). You won't want to miss this memorable evening of wine, food and conversation from both Mitch and Chef Erin!

* Please note, this dinner will take place on the second floor in loft space. A flight of low-rise stairs is the only way to access the seated dinner area.

Each selection will be paired with its own wine inspired dinner course, prepared by Chef Erin Sealy. Chef Erin specializes in pairing food with wine, with a slightly different approach than most. Prior to creating a menu, each wine is tasted and reviewed and then she creates a food pairing, highlighting the nuances of each wine. This concept creates a dinner and pairing experience with layers of complexity and unique creations which exemplify the enjoyment of each wine. With a passion for food and wine, Chef Erin delights attendees with a detailed account of the pairing concept and cooking techniques that create each course. Though we cannot guarantee special requests for menu changes, please contact us (email/phone above) if you have any food allergies or special considerations and we'll do our best to accommodate! Please understand that this is pop-up experience, it is not a restaurant. A temporary kitchen is built to accommodate the dinner and resources are very limited. Minor changes can usually be accommodated. Diary Free and Vegan requests cannot be met, though reduced dairy and vegetarian typically can be met. Menu changes should be requested at least 48 hours prior to an event. Please DO NOT buy tickets with the assumption that any special request will be met, please check with us first. Please note that if you purchase tickets before inquiring about your modification, and it cannot be accommodated, the below cancellation policy still applies.

There is a 48-hour full-refund policy. We apologize that cancellations within 48 hours of the event cannot be refunded.

Lastly, please note that your total cost for the dinner includes two processing fees that are collected by third parties and do not transfer to Wine Pairs Events. Instead of passing on these additional fees to customers, we have decided to absorb them. This however means that when a customer cancels a reservation, at any point, 6% of the ticket total is non-refundable, as these processors do not issue refunds for any reason.

About This Venue:

Perspektive Studio is located in a mixed-use industrial area of San Juan Capistrano. The entrance and restroom facilities are on the ground level, while the seating area is in the loft space upstairs. The seating area is only accessible via a flight of low-rise stairs. This venue seats about 40 people in standard table height seating. All chairs have backs. Group seating of up to 8 people is easily accommodated. Seating is assigned at all events, if anyone in your group has made a separate reservation and you would like to sit together, please ensure you provided this information during registration (chef@winepairsevents.com). There is a dedicated, free parking lot, however ride share services or taxis are always recommended. If you arrive early, there will be a by the glass wine list available to purchase from.

  • Add On: Bottle of Champagne

    Arrive a little early and enjoy a 750ml bottle of chilled champagne before the dinner starts. Currently offering Canard-Duchene Cuvee Leonie Brut. Champagne is only available by the bottle (750ml) and MUST be ordered at the time of purchasing tickets. Your bottle will be chilled prior to the dinner and will come with dedicated glasses (1 per seat in your reservation).
